Yes. Use the "per person" expense type, or split an expense among just that one traveler — it won't touch anyone else's balance.
Can uneven splitting and partial-stay proration happen in the same trip?
Yes — every expense has its own participant list and, for housing, its own date-based proration. They combine automatically across the whole trip.
